6 DAYS and the Midnight Munchies

Okay here are some midnight munchy favorites!!




Baby Oreos. Cookies and cream buttercream frosting.. Chocolate cake! Please please please.

Only 6 Days! Repeat: u can do it!

Smore's Cupcakes!


Beautiful Sweet Delicious Smore's Cupcake.  There is nothing I love more than Camping and Smore's.  Just the perfection in the melting of the chocolate and the marshmallow on the cracker! AHHH - Love it!  

Well what is better than that is Cupcakes that taste like the perfection in Smore's.  So here are some idea's in how you can create your own personal Smore's Cupcake!  


Graham Cracker on bottom (use melted butter to harden) and Graham Cracker on Top! Chocolate cake with Buttercream Frosting (I would add the Marshmallow Frosting Check out the recipe below)

Fill your chocolate batter.

Insert Caramel sauce and Marshmallow!  Top with Marshmallow Buttercream Frosting!  EnJOY!


Or Completely decorate your cupcake like a professional :)


RECIPES :

S’mores Cupcakes
For the marshmallow buttercream frosting:
  • 8 oz. jumbo (or mini) marshmallows or 1 Jar of Marshmallow Creme
  • 1 stick butter
  • 2 & 1/2-3 cups powdered sugar
Heat the butter, marshmallows and milk in a saucepan over medium heat until melted. Whisk together until smooth. remove from heat and allow to cool. Place in a large heat-proof bowl, beat in powdered sugar 1/2 cup at a time.
Set aside.
For the chocolate ganache filling:
  • 4 oz. semi-sweet chocolate, chopped
  • 1/4 cup heavy whipping cream
  • 1 tbsp butter
Place chocolate in a stainless steel bowl. Heat the cream and butter over medium-low until just boiling. Remove from heat and immediately pour over chocolate. Let stand 5 minutes, then whisk until smooth. Place in the freezer.
For the cupcakes:
  • 1 1/2 cups graham cracker crumbs (about 15 whole crackers ground in processor)
  • 1/2 cup all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 3/4 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
 Preheat oven to 350°F. Line 12 standard muffin cups with paper liners. Whisk graham crumbs, flour, baking powder, and pinch of salt in a medium bowl. Beat butter and sugar in large bowl until light and fluffy. Add eggs 1 at a time, beating to blend between additions. Beat in vanilla. Add graham-cracker mixture in 3 additions alternately with milk in 2 additions, beginning and ending with graham-cracker mixture.
Fill muffin cups 1/3 of the way with batter. Spoon now hardened ganache into the center of each cup by teaspoon. Divide remaining batter between the cups to cover ganache.
Bake cupcakes until tester inserted into center come out clean, about 22 minutes. Transfer cupcakes to rack; cool completely.
Spoon marshmallow buttercream frosting over each cupcake. Garnish with additional crushed graham crackers and melted chocolate drizzle.



It is almost time for me to eat a cupcake.

Ferrero Roche (or Crunch balls) Cupcakes!

So I stumbled across this cupcake on Pinterest!  Then it looked so good that I wanted to find the recipe... so after some creeping on pinterest and the web - I FOUND IT!  woo!

 First grab your Chocolates - I would use Nestle Crunch if I were making them :)


Unwrap!  YUM


Circle out!


Insert Nutella!




Stick the Chocolate on top!  





Smile and Eat it
Here is the recipe!  ENJOY

Ferrero Rocher Cupcakes by Monica H
  • 1 recipe chocolate cupcakes (recipe below)
  • 1 13 oz. jar Nutella
  • 15 Ferrero Rocher candies
Cut out a small piece out of the top of the cooled cupcake using a small paring knife. Discard or eat the small pieces of cake that are removed from the cupcakes. This will create a well for the Nutella to sit in.
Fill each cupcake with 1 tablespoon of Nutella. Repeat until the Nutella has been evenly divided amongst the cupcakes. Top off each cupcake with a Ferrero Rocher candy, slighting pressing into the Nutella so it stays put.
Store at room temperature in an airtight container.
Makes 15 cupcakes.

Chocolate Chip Cookies

My weakness... besides Cupcakes - most definitely has to be chocolate chip cookies!  The small bite size ones - good grief I could eat them all day.  So today I am going to give you some of my favorite pictures of chocolate chip cookie cupcakes!  I hope you enjoy!




All this cupcake needs is frosting on the top!  But the cookie looks good.


This is chocolate chip FROSTING on top!  not cookie dough!  does that not look soo good!  yes. all of them - are mine!  NOT REALLY! :)  this is just a picture off the internet but it looks good :)


this cupcake looks like it was so good - however, this picture is from the internet and not from my kitchen and i promise that half of this cupcake is NOT in my stomach!  GUARANTEE


oooo - you wouldn't dare tempt me with this one with 35 days left... 
cupcakes are so memorable and so fun and so tasty!

You will always remember looking at these cupcakes - and then the first bite after withdraw for so long is just so incredibly filling!

Most of the cupcakes look like professionals have made them - however, this one looks like I could have made it.  VERY SATISFYING!




Okay I know it's not chocolate chip cookie - but it is the best girl scout cookie ever made:  THE SAMOA!  love it.  Doesn't the carmel-ly drip and the chocolate AND vanilla buttercream frosting look so intense!  I could probably eat all of these.

Mickey Mouse!!

Love it!! I am a huge fan of Mickey Mouse! I love him! Not only because I was an EEE at Ouachita but because i grew up Loving Disney!! Anyways! Here are a few of my favorite cupcakes that resemble Mickey and my love of the red black an white!!

Graduated and Ready to Go!

So I have been dieting for Miss Arkansas and been thinking a lot about cupcakes and so I decided I should probably start blogging again!  So here I am.  Watching Cupcake Wars on TV and blogging about the utter goodness that is cupcakes.

I know that it is graduation time and with that come graduation parties and congrats to all of the graduates out there young and old, high school and college!  WOo... But check out these cupcakes - which one would you want at your graduation party?

Well, If you know me at ALL you know I want the red black and white ones!  However, do you know how much individualized cupcakes run?  The price of individual cupcakes are upwards of $3.00 a cupcakes which means $30.00 plus dollars a dozen... WOW!  That wouldn't even begin to feed the mafia!  (Yes, the mafia.  I am apart of the mafia in arkansas)

So check out these cupcakes.  Listed from favorite to least favorite.






How Good does this bottom cupcake look!!!  I love oreos - I have a few oreo cupcakes that I will use for a post later this summer and ooo I think this cupcake would taste soo good.
